Red White & Blue Swirled Cupcake Frosting
My favorite Swiss Meringue Buttercream Recipe:
(Enough to generously frost 1 Dozen Cupcakes )
5 Large Egg Whites
1 Cup of Granulated Sugar (200 grams)
1/4 Teaspoon of Kosher
1/2 Teaspoon of Cream of Tartar
2 1/2 Sticks of Butter (10 ounces) (2284 grams)
1 1/2 Teaspoons of Vanilla Extract or Vanilla Bean Paste
Whisk egg whites, sugar, salt and cream of tartar in the bowl of an electric mixer over simmering water until the egg-white mixture reaches a temperature of 160°F (71°C) and sugar is dissolved.
Place the bowl on the mixer and whip with the wire whisk attachment on high speed until the mixture is glossy and the bowl is cool to the touch. This will take about 5-6 minutes.
Meanwhile cut up butter into 2-inch pieces.
Switch to the paddle attachment and begin adding the butter a piece at a time keeping the mixture on low speed. Continue beating until the mixture begins to look smooth. This may take as long as 7-8 minutes. At this point continue to beat for an additional 4-5 minutes on low. If the buttercream does not come together, place the bowl and the whip attachment in the fridge for 10-15 minutes and beat again on low until the frosting comes together and looks smooth.
Lay a piece of plastic wrap flat on the counter.
Place a stripe of the red frosting.

Place a stripe of white frosting next to the red.

Place a stripe of blue on top of the red and white.

Roll the plastic wrap to make a tube of frosting and twist the ends.

Take the large plastic bag and insert the decorating tip. Cut off one end of the plastic wrapped frosting and insert it into the large decorating bag.


Pipe the frosting onto the cupcakes in a clockwise motion starting on the outside working your way in.

Red, White & Blue Cupcake Frosting
Equipment
- A batch of your favorite Swiss Meringue Buttercream or American Butter Cream
- Your favorite Chocolate or Vanilla Cupcakes
- Red Food Coloring
- Blue Food Coloring
- 1 Large Pastry Bag
- 1 Large Star Decorating Tip (I used Ateco #868)
- Sprinkles – Optional
Instructions
- Divide the frosting into 3 equal portions.
- Color 1 portion red, one portion blue and leave the remaining white.
- Lay a piece of plastic wrap flat on the counter.
- Place a stripe of the red frosting on the plastic wrap.
- Place a stripe of white frosting next to the red.
- Place a stripe of blue on top of the red and white.
- Roll the plastic wrap to make a tube of frosting.
- Take the large plastic bag and insert the decorating tip. Cut off one end of the plastic wrap with the frosting and insert it into the large decorating bag.
- Pipe the frosting onto the cupcakes in a clockwise motion starting on the outside working your way in.
