Strawberry White Chocolate Zabaglione
What is zabaglione? It’s a light traditional Italian Dessert made by gently warming egg yolks, sugar and some form of liquor over a water bath until is thick, almost tripled in volume, is light in color and the whisk will leave trails in the mixture. This is a great dessert to make when you have a few friends over. It can be made at the end of the meal
and served immediately. Make sure to enlist your friends to share in the whisking!!!
INGREDIENTS:
4 Egg Yolks
3 Tablespoons of Granulated Sugar (38 grams)
3 Tablespoons of Mozart Strawberry White Chocolate Liqueur ***
2 Cups of quartered fresh strawberries
Freeze dried strawberry powder from crushed freeze dried strawberries (optional)
1 ounce of finely chopped white chocolate (optional)
METHOD:
In a large glass or copper bowl, whisk together the egg yolks, sugar and liqueur.
Place the bowl over a pot of simmering water. Make sure the bowl does not touch the water.
By hand, whisk the mixture for 6-8 minutes. You will know the zabaglione is done when the mixture is light in color, tripled in volume and the whisk leaves trails in the mixture.
Remove the bowl from the pot and whisk a minute or two more to slightly cool the mixture.
Divide the strawberries evenly amongst 4 glasses and pour the zabaglione over them.
Garnish with powdered freeze dried strawberries and white chocolate. (optional)
Serve immediately!
*** Sweet Marsala wine is traditional and can be used to replace the liqueur in this recipe.
