Bacon Cheeseburger Galette

Cheeseburger Galette

Ingredients
  

  • 1 Batch of Flakey All Butter Pie Dough – Recipe below or 1 Store bought Pie Dough
  • 12 Ounces of Ground Beef
  • Cup of Coarsely Grated Cheddar Cheese
  • 4 Slices of Bacon cooked and crumbled
  • 1 -2 Tomatoes
  • Cup of Shredded Iceberg or Romaine Lettuce
  • 2-3 Tablespoons of Diced Dill Pickles
  • 1 Whole egg – Beaten
  • 2-3 Tablespoons of Sesame Seeds
  • 3 Tablespoons Mayonnaise
  • 3 Tablespoons Ketchup

Flakey All Butter Pie Dough:

  • 180 Grams of All Purpose Flour 1 ½ Cups
  • ¼ Teaspoon of Kosher Salt
  • 140 GRams of Cold Unsalted Butter, cut into ½” cubes 10 Tablespoons
  • 5-6 Tablespoons of Ice Water

Instructions
 

  • “Special Sauce” – 3 Tablespoons of Mayonnaise mixed with 3 Tablespoons of Ketchup
  • Prepare the pie dough and place in the refrigerator for 1-2 hours to chill. (Recipe below)
  • In a skillet, brown the ground beef until it is no longer pink and season with salt and pepper. Drain some of the fat and allow to cool.
  • Slice the tomatoes into ¼” slices.
  • On a lightly floured surface roll the dough into a 14” diameter circle and place it on a parchment lined baking sheet.
  • Pile the ground beef in the middle of the crust leaving a 2 inch border all around.
  • Scatter the cheese over the beef and then the crumbled bacon.
  • Layer on the sliced tomatoes having them overlapping.
  • Fold the 2” border up over the filling leaving most of the filling exposed.
  • Beat the egg with a pinch of salt and brush it over the crust.
  • Sprinkle with sesame seeds.
  • Place in the freezer for about 15-20 minutes. This will insure that your pastry is nice and cold.
  • Bake in a 425° degree oven on the bottom rack for 15 minutes. Reduce temp to 375° and bake for 35-40 minutes or until golden brown.
  • Let cool about 10 minutes.
  • Whisk together the mayonnaise and ketchup.
  • Garnish with shredded lettuce, diced pickles and drizzle with the special sauce.
  • Enjoy!!

Flakey All Butter Pie Dough:

  • In a large bowl whisk together the flour and salt.
  • Add the butter to the flour.  Toss the butter with the flour and start to squeeze the butter into the flour until you have pieces of the butter where some are larger and smaller than the size of a pea.
  • Add 5 tablespoons of the water to the mixture and toss gently to combine.
  • Start to bring the dough together.  If the dough seems dry and is not holding together add additional water 1-2 teaspoons at a time and continue to gently mix until the dough until it holds together.
  • Gather the dough together and form into a disc about 1" thick.
  • Wrap in plastic and refrigerate for 1-2 hours.
