Italian-ish Classic Wedge Salad
This is my Italian twist on a classic wedge salad. Who doesn’t love a wedge salad, the crisp iceberg lettuce with a creamy blue cheese dressing, crispy onions and bacon. To mix things up I made some changes. I swapped the bacon for some crispy pancetta, replaced the blue cheese in the dressing with gorgonzola and added my fried zucchini noodles to replace the onions.

Italian-ish Classic Wedge Salad
Ingredients
- ½ Head of Iceberg Lettuce
- 2 Ounces of Diced Pancetta
- 14-16 halved Cherry or Grape Tomatoes
- Frizzled Zoodles Recipe on my website
Dressing:
- ½ Cup of Mayonnaise
- 2 Tablespoons of Sour Cream
- ¼ Cup of Farmland Fresh Dairies Buttermilk
- 1 Tablespoon of Lemon Juice
- 1 Teaspoon of Finely Chopped Chives
- Salt & Pepper to taste
- 2 Ounces of Crumbled Gorgonzola Cheese
Instructions
- Remove the core form the head of iceberg lettuce. Wash and cut in half.
- Cut one half into 4 wedges.
- Place the pancetta in a small saute pan and cook over medium heat until crispy. When done drain on a piece of paper toweling.
Dressing:
- In a medium bowl whisk together the mayonnaise, sour cream, Farmland Fresh Dairies buttermilk, lemon juice, chives, salt and pepper.
- Stir in the crumbled gorgonzola cheese.
- Place each wedge on plate. Pour 1/4 of the dressing over each wedge.
- Sprinkle with tomatoes and pancetta.
- Sprinkle with frizzled zoodles.
