Onion Soup Inspired Ground Beef Turnovers
Ingredients
- 4 Ounces of Ground Beef 1/4 Pound
- 2 Tablespoons of Unsalted Butter
- 1 Tablespoon of Olive Oil
- 2 Tablespoons of Finely Chopped Fresh Thyme
- 2/3 Cup of Spice World Easy Onion
- ¼ Teaspoon of Spice World Minced Garlic
- 1 Teaspoon of Granulated Sugar You can add more if you like a sweeter taste
- 2 Tablespoons of All-Purpose Flour
- ½ Cup of Beef Stock
- Salt & Pepper to Taste
- ¾ Cup of Coarsely Grated Gruyere Cheese
- 2 Tablespoons of Finely Grated Parmesan Cheese
- 1 Package of Puff Pastry The brand with 2 sheets
Egg Wash & Topping:
- 1 Whole egg
- 1 Teaspoon of Water
- 2-3 Tablespoons of Finely Grated Parmesan Cheese
- 1 Teaspoon of Finely Chopped Fresh Thyme
Instructions
- In a large skillet, brown the ground beef. Remove from the pan and set aside.
- Clean the pan and over medium heat melt the butter with olive oil and add the fresh thyme.
- Next add the Spice World Easy Onion and Minced Garlic. Add the sugar and cook until the onions begin to brown. This may take 8-10 minutes. If they begin to brown to fast lower the heat. They should be a golden brown, but not burnt.
- Sprinkle in the flour and mix until combined. Cook stirring for about a minute.
- Add the beef stock and cook stirring until the mixture thickens.
- Add the ground beef and mix until combined. Allow the mixture to cool or make the day before and refrigerate.
- Mix in the parmesan and gruyere cheeses.
- Working with one piece of puff pastry at a time, unfold the pastry and gently roll over with a rolling pin to smooth it out.
- Cut 9 3” circles from one sheet.
- Mix the egg yolk and 2 teaspoon of water to create the egg wash.
- Brush a puff pastry round all over with egg wash and place 2 teaspoons of the filling in the center. Elongate the filling so it will be easier to close the sides.
- Fold the pastry in half so the edges meet, covering the filling. Pinch the edges well and seal with the tines of a fork. Repeat with the remaining circles and then with the second piece of puff pastry.
- Place the turnovers on a parchment lined baking sheet. All 18 should fit on a half sheet pan.
- Brush the turnovers with the egg wash and sprinkle with a mixture of the finely grated parmesan and fresh thyme.
- Preheat your oven to 425° and place the turnover in the freezer for 30 minutes.
- Place the turnovers in the oven and reduce the temperature to 400°
- Bake for 20-25 minutes or until golden brown and the pastry is puffed and no longer looks shiny.
