Savory Crispy Pancetta and Asiago Cheese Soda Bread

The perfect accompaniment to soup or stew, this super easy savory soda bread.
This bread can be easily customized. Swap in your favorite cheese or herb.
When cutting the cross in the top I like to lightly coat the knife with oil so the knife does not stick to the dough and you get a clean cut.
Savory Crispy Pancetta and Asiago Cheese Soda Bread
Ingredients
- 240 grams of All Purpose Flour 2 Cups
- ½ Teaspoon of Baking Soda
- ½ Teaspoon of Kosher Salt
- 2 Teaspoons of Granulated Sugar
- 42 grams of Cold Unsalted Butter 3 Tablespoons
- 180 ml of Buttermilk ¾ Cup
- 1 Large Egg Yolk
- 3 Ounces of Diced Pancetta
- 4 Ounces of Asiago Cheese
- 1 Tablespoon of Finely Chopped Fresh Parsley
- Ground Black Pepper to taste
Instructions
- Preheat your oven to 375°.
- In a small frying pan over medium heat. cook the pancetta until crispy. remove the pancetta with a slptted spoon and place on a plate lined with paper towel. the paper will absorb any excess fat.
- Coarsely grate the asiago cheese.
- In a large bowl whisk together the flour, baking soda, salt and sugar.
- Cut the butter into ½” cubes and add to the flour mixture. Using your hands, toss to coat the butter with flour. Start to squeeze the butter into the flour with your fingers and continue until the mixture looks like very coarse cornmeal.
- Add the pancetta, cheese, parsley anf black pepper. Stir to combine.
- Combine the buttermilk with the egg yolk and whisk to combine.
- Make a well in the center of the flour/butter mixture and pour in the buttermilk/egg yolk mixture.
- Using a spatula, gently stir the mixture until it starts to come together, it will be sticky. If the mixture looks dry add an additional tablespoon or two of buttermilk.
- Lightly flour your work surface and dump out the dough. Gently bring the dough together and form it into a ball.
- Place the dough onto a parchment lined baking sheet.
- Slice a cross into the top about ½” deep.
- Bake for 30-35 minutes or until golden brown, the bottom sounds hollow when tapped and the internal temperature is about 195℉ when taken with an instant read thermometer.
- Allow the bread to cool completely before slicing and enjoying.
