“Special Sauce” – 3 Tablespoons of Mayonnaise mixed with 3 Tablespoons of Ketchup
Prepare the pie dough and place in the refrigerator for 1-2 hours to chill. (Recipe below)
In a skillet, brown the ground beef until it is no longer pink and season with salt and pepper. Drain some of the fat and allow to cool.
Slice the tomatoes into ¼” slices.
On a lightly floured surface roll the dough into a 14” diameter circle and place it on a parchment lined baking sheet.
Pile the ground beef in the middle of the crust leaving a 2 inch border all around.
Scatter the cheese over the beef and then the crumbled bacon.
Layer on the sliced tomatoes having them overlapping.
Fold the 2” border up over the filling leaving most of the filling exposed.
Beat the egg with a pinch of salt and brush it over the crust.
Sprinkle with sesame seeds.
Place in the freezer for about 15-20 minutes. This will insure that your pastry is nice and cold.
Bake in a 425° degree oven on the bottom rack for 15 minutes. Reduce temp to 375° and bake for 35-40 minutes or until golden brown.
Let cool about 10 minutes.
Whisk together the mayonnaise and ketchup.
Garnish with shredded lettuce, diced pickles and drizzle with the special sauce.
