The night before you will be making the yogurt bites, place the 1 cup of yogurt in a strainer and place the strainer of a bowl. Cover with plastic wrap and and place in the refrigerator overnight to drain.
Place the drained yogurt in a bowl and whisk in the honey and vanilla.
Add the pistachios and halved raspberries and gently fold in with a spatula.
Line a baking sheet with parchment paper.
Portion out the yogurt using a scoop.
Place the baking sheet in the freezer until the yogurt bites are frozen solid.
Melt the semi-sweet chocolate.
Drop a frozen yogurt bite into the melted chocolate and turn to coat , Remove the yogurt bites from the chocolate using a folk. Shake of the excess chocolate and place on the parchment lined baking sheet.
Repeat until all the bites have been coated with chocolate.
Place the sheet back in freezer until the chocolate is set.
Place the yogurt bites into a container and store in the freezer.
