Chocolate Covered Frozen Yogurt Raspberry Pistachio Bites

⭐️Drain the yogurt overnight. Measure the yogurt and place it in a mesh strainer and then place the strainer over a bowl. Cover with plastic wrap and place it in the refrigerator. It’s important to drain the yogurt because affter everything is mixed in you want to have a thick and creamy mixture. If the mixture is thin and watery when you portion them out, they will spread and get flat instead of holding their shape before freezing.
Chocolate Covered Frozen Yogurt Raspberry Pistachio Bites
Ingredients
- 228 grams of Farmland Fresh Dairies Whole MIlk Yogurt, Strained Overnight 1 Cup
- 2 Tablespoon of Honey
- ½ Teaspoon of Vanilla Bean Paste or Vanilla Extract
- 3 Talespoons of Coarsely Chopped Roasted & Salted Pistachios
- ½ Cup of Fresh Raspberries, Cut in half
- 8 Ounces of Semi-Sweet Chocolate
Instructions
- The night before you will be making the yogurt bites, place the 1 cup of yogurt in a strainer and place the strainer of a bowl. Cover with plastic wrap and and place in the refrigerator overnight to drain.
- Place the drained yogurt in a bowl and whisk in the honey and vanilla.
- Add the pistachios and halved raspberries and gently fold in with a spatula.
- Line a baking sheet with parchment paper.
- Portion out the yogurt using a scoop.
- Place the baking sheet in the freezer until the yogurt bites are frozen solid.
- Melt the semi-sweet chocolate.
- Drop a frozen yogurt bite into the melted chocolate and turn to coat , Remove the yogurt bites from the chocolate using a folk. Shake of the excess chocolate and place on the parchment lined baking sheet.
- Repeat until all the bites have been coated with chocolate.
- Place the sheet back in freezer until the chocolate is set.
- Place the yogurt bites into a container and store in the freezer.
