Eggnog Cookies

Ingredients
  

  • 57 grams of Softened Unsalted Butter
  • 4 tablespoons of Room Temperature Farmland Fresh Dairies Eggnog
  • 66 grams of Granulated Sugar
  • 66 grams of Brown Sugar
  • 1 large Egg Yolk
  • 150 grams of AP Flour 1 ¼ Cups
  • ½ teaspoon of Baking Soda
  • ¼ teaspoon of Kosher Salt
  • 2 Tablespoons of Granulated Sugar
  • 1 Teaspoon of Cinnamon
  • ½ Teaspoon of Grated NUtmeg

Instructions
 

  • Preheat your oven to 350℉.
  • In the bowl of an electric mixer cream together the butter, sugars and eggnog on medium speed for 1-2 minutes.
  • Add the egg yolk and mix until combined, about 30 seconds
  • Whisk together the flour, baking soda and salt, add to the butter mixture and beat on low until just combined.
  • Using a tablespoon size scoop, scoop the batter and roll into a ball. (22 grams each or about 1¼" in diameter)
  • Whisk together the 2 tablespoons of granulated sugar, cinnamon and nutmeg.
  • Roll the balls of dough in the sugar/spice mix.
  • Place on a baking sheet lined with parchment paper 2” apart.
  • Bake for 12 minutes.
  • Allow the cookies to cool on the pan for 5 minutes. Place the cookies on a wire rack to cool completely.
