Eggnog Cookies using Farmland Fresh Dairies Eggnog

STAR BAKER TIP:
Make sure the eggnog is romm temperature. Adding cold eggnog, right out of the fridge, to room temperature butter will cause the butter to firm up and not beat up smooth.

Eggnog Cookies
Ingredients
- 57 grams of Softened Unsalted Butter
- 4 tablespoons of Room Temperature Farmland Fresh Dairies Eggnog
- 66 grams of Granulated Sugar
- 66 grams of Brown Sugar
- 1 large Egg Yolk
- 150 grams of AP Flour 1 ¼ Cups
- ½ teaspoon of Baking Soda
- ¼ teaspoon of Kosher Salt
- 2 Tablespoons of Granulated Sugar
- 1 Teaspoon of Cinnamon
- ½ Teaspoon of Grated NUtmeg
Instructions
- Preheat your oven to 350℉.
- In the bowl of an electric mixer cream together the butter, sugars and eggnog on medium speed for 1-2 minutes.
- Add the egg yolk and mix until combined, about 30 seconds
- Whisk together the flour, baking soda and salt, add to the butter mixture and beat on low until just combined.
- Using a tablespoon size scoop, scoop the batter and roll into a ball. (22 grams each or about 1¼" in diameter)
- Whisk together the 2 tablespoons of granulated sugar, cinnamon and nutmeg.
- Roll the balls of dough in the sugar/spice mix.
- Place on a baking sheet lined with parchment paper 2” apart.
- Bake for 12 minutes.
- Allow the cookies to cool on the pan for 5 minutes. Place the cookies on a wire rack to cool completely.
