My Version of Citi Field’s Rainbow Cookie Eggroll

Italian Rainbow cookies or 3-color cookies are just about the perfect cookie, But Citi Field has found a way to elevate them in the most delicious way!

They have taken the rainbow cookie, raspberry preserves and chocolate sauce and rolled it all up in an eggroll wrapper, and fried it.

It was on the menu at Citi Field for the 2024 season and they just brought it back this season for a limited rum. It seems fans want it back permanently! Last year I made a version of it at home and posted the process on my Instagram .

But this year, because of it’s popularity I’m including it in my MLB Stadium Dessert Series.

My version is close to the original. I spread raspberry preserves on the wrapper before rolling up the cookie. After frying, i drizzled it with chocolate sauce and dusted with powdered sugar. Because you can’t have an Italian dessert without powdered sugar.

You can find them at Wok N’ Roll in center field, when available.

STAR BAKER TIPS:

⭐️In the video I used a solid piece of rainbow cookie approximately 2 1/2″ x 1/2″. That is probably about 4-5 cookies, put together, that you could buy at a bakery. They will definitely turn out better with one solid piece. You might be able to ask a bakery to cut the cookie to the dimensions needed and you can always bake them yourself . These cookies freeze very well so you could cut them to the dimensions you need, individually wrap and freeze and defrost whatever you need.

⭐️Egg Roll wrappers are easy to find at your local supper market. There are quite a few in a pack age. To use up the remaining wrappers, cut them into strips and fry until golden brown. They make a great crunchy addition to salads.

⭐️The recipe makes 4, but you can make as many as you like!!!

My Version of Citi Field’s Rainbow Cookie Eggroll

Ingredients
  

  • 20 Italian 3 Color Cookies, approximately (1¼" x ½") each Purchased or Homemade
  • 4 Eggroll Wrappers
  • 6-8 Teaspoons of Raspberry Preserves
  • Vegetable OIl for frying
  • Chocolate Sauce
  • Powdered Sugar

Instructions
 

  • Take 1 eggroll wrapper and place it on a flat surface with one of the points facing you.
  • Spread about 1-2 teaspoons of raspberry preserves in the middle of the wrapper.
  • Place the piece of rainbow cookie slightly toward the point nearest to you.
  • Cover the cookie with the point of the wrapper and begin to roll. Fold in the sides and continue to roll. Use a bit of water to seal the sides and the end. (See video above)
  • Repeat 3 more times.
  • Place the oil in a medium saucepan so that your oil is at least 1½" deep. Heat to 360-365℉.
  • Fry the wrapped cookie on all 4 sides until golden brown.
  • Remove from the oil and place on a paper towel lined plate.
  • Drizzle with chocolate sauce , cut in half crosswise on the diagonal and dust with powdered sugar.
