Up your avocado toast game with there crispy prosciutto, chive and gruyere savory waffles

STAR BAKER TIPS:
Cornmeal: I used Bob’s Red Mill Cornmeal, medium grind. The cornmeal adds a savory note and adds to the waffle’s crispness.
To keep the waffles crisp while baking the remaining batter, place them on a rack in a preheated 250 degrees Fahrenheit oven until all the waffles have been baked. Do not leave them in too long or they will dry out.
Crispy Prosciutto Gruyere and Chive Savory Waffles
Ingredients
- 1 Cup of Farmland Fresh Dairies Buttermilk
- 1 Large Whole Egg
- 4 Tablespoons of Unsalted Butter, Melted and Cooled
- ¾ Cup + 2 Tablespoons of All Purpose Flour
- 2 Tablespoons of Cornmeal
- 1 Tablespoon of Granulated Sugar
- ¾ Teaspoon of Baking Powder
- ½ Teaspoon of Baking Soda
- ¼ Teaspoon of Kosher Salt
- 2 Slices of Prosciutto
- 1 Tablespoon of Chopped Chives
- 1½ Ounces of Gruyere Cheese, Coarsely Grated
- Sliced Avocado and fried eggs for topping
Instructions
- Preheat your oven to 350℉ Place the slices of prosciutto on a parchment lined baking sheet and bake for 8 minutes. Remove the pan from the oven and place the prosciutto on a rack to cool completely and crisp up.
- Whisk together the buttermilk, egg and melted butter, Set aside.
- In a large bowl, whisk together flour, cornmeal, baking powder, baking soda and kosher salt.
- Add the chopped crispy prosciutto, chives and gruyere cheese and mix until combined.
- Add the wet ingredients to the dry and mix gently until just combined. Do not over mix.
- Next make your waffles: Follow your waffle iron's manufacturers directions regarding the amount of batter and baking time.
- Top with sliced avocado and a fried egg, or your choice of toppings.
